Easy Tomato Soup

• 1 onion, chopped
• 3 cloves garlic, diced roughly
• water
• 1 can crushed tomatoes (796 mL or 28 fl oz)
• 2 tsp oregano
• 1 tsp basil
• Vegetable broth powder (optional)


1. Sauté the onion and garlic in water (I try to avoid oil as much as possible.)

2. Add tomatoes, oregano, basil and an appropriate amount of water. Please adjust the amount of oregano and basil to taste!

3. Heat through. (I use an Instant Pot’s soup setting for 4 minutes with a quick release.)

4. Carefully pour soup into a blender or use a stick immersion blender until desired consistency is reached. (Use caution when pouring into a blender as liquids will be hot.)

5. Enjoy!
